I like all food and the dishes change so much from one region to  the other...
I do love vegetables though and here we get plenty (even some I&#039;d never seen before), my favourite being the tiny artichokes (nothing like the huge globe artichokes we get in the north of France).
In Roma there is actually something fabulous done with artichokes, which is an old Jewish recipe: Carciofo alla Giudea (an artichoke which is cleverly cut through, flattened a bit and fried in olive oil for a long time). Despite it being fried this starter is not fat (there is no batter on it to retain oil) but crispy and the flavours of the vegetable are enhanced.</description>
